If there was ever a last-minute crowd pleasing dessert you could whip up in a hurry, it's the 2 ingredient simple peanut clusters recipe. You don't even have to turn on the oven and bake a thing. Plus, any time I make them, they are the first to go. Every. Single. Time.

Who doesn't love peanuts and chocolate and put them together and well it's a match made in heaven. These make perfect gifts as well as a good addition to your cookie plate. Let's get cooking, shall we?

Simple 2 Ingredient Peanut Clusters Recipe

I didn't make them for years because I figured something that good had to be hard to make but when a friend brought them to a cookie exchange, I asked for the recipe and I am so glad I did. If you do one thing this Christmas, make yourself some peanut clusters. No need to thank me ;)!

Chocolate Almond Bark

Cocktail Peanuts (16 oz jar)

The trickiest part of the recipe is melting the chocolate. Take it from me, slow and steady wins the race. If the pan gets too hot, you will burn the chocolate.

Break the chocolate into pieces and place in a sauce pan. Turn the oven on low heat and stir. Continue to stir consistently as the chocolate melts. Make sure you scrape the sides and the bottom of the pan regularly.

Once the chocolate is completely melted (like the picture above), turn off the heat. Go ahead and add the peanuts and stir them in so they are fully covered in chocolate.

Line your counter with wax paper. Then, using a soup spoon, scoop up some of the chocolate-covered peanuts and make a small pile on the wax paper. It's up to you how big you want your clusters to be.

Continue, scooping and creating clusters on the wax paper. Allow, the peanut clusters to cool and harden before storing away.

This recipe usually makes 48 peanut clusters depending on the size you make them.

What kind of peanuts should you use in peanut clusters?

My family prefers the taste of cocktail peanuts but you can also use dry-roasted, salted peanuts. Salted peanuts taste best. I would not recommend unsalted peanuts for this recipe.

Can you freeze peanut clusters?

Yes you can! Allow the peanut clusters to cool and harden before placing them in a freezer safe bag and storing them.

Can you melt almond bark in the microwave?

Yes! Place almond bark in a microwave-safe bowl and microwave for 30 second intervals, stirring between, until it's a smooth melted texture.

What is almond bark?

It's a confection chocolate used for baking and coating things like pretzels, nuts, and fruits. It melts easily and when cooled, creates a smooth finish.

Does almond bark contain almonds?

No. Double check your package but the reason it got named almond bark is because its original purpose was for making almond bark.

Ingredients

  • 24 oz Almond Bark
  • 16 oz Cocktail Peanuts

Instructions

  1. Break apart almond bark and slowly melt in a sauce pan on low heat.
  2. Continue to stir regularly until the chocolate is smooth and melted through. Be careful to not let the pan to get too hot and burn the almond bark.
  3. When the chocolate has melted and is smooth, add the cocktail peanuts and stir to coat.
  4. Use a spoon to scoop chocolate-covered peanuts on to wax paper to cool and harden.
  5. Allow the peanut clusters to cool for an hour before storing in an air-tight container.

Notes

In lieu of cocktail peanuts, dry-roasted salted peanuts can be used.

Peanut clusters can be frozen. Allow to cool and harden before placing in a freezer safe bag and storing.
